Frank O’Hara cofounded Eastern Fisheries, Inc. in 1978 with Roy Enoksen in New
Bedford Massachusetts with the idea of not only managing a fishing fleet but also
managing the processing plants that would distribute their large catch of scallops,
flatfish and other specialty fish.
Eastern Fisheries, Inc. processing:

Grading: Scallops are washing in salt brine to be weighed, sized and stored
•
Stirring: Scallops are stirred with a mixing arm for consistency
•
IQF (Individual Quick Freezing): Scallops are frozen on conveyor belts at
high speed with an ice glaze that keeps the scallops fresh longer
•
Block Freezing: Scallops are fed into protective plastic bags and places into
block boxes to be frozen by multiple large capacity plate freezers.
•
Cold Storage: On site storage allows for more than 2,000 pallets
